Quick Peach Chipotle Salsa


Hi there!  Guess what? (this is a tricky one...) Its the weekend!!!  And even better, it is the weekend and it is still summer!  Yippee!  Does it get any better than this?  So, before you head out to your beach barbecues, backyard parties, or picnics in the park to enjoy these last beautiful days of summer, I wanted to give you a super quick recipe that you can take along with you.  

And guess what else?  Oh yes, it has peaches.  I warned you that I am obsessed. 




Since you can make this recipe in only a few short minutes, I am going to take only a minute to tell you about it.  Here is how it goes: Chop, chop, chop.  Mix, mix, mix.  Smoky, sweet, spicy.


You can take your salsa wherever you want.  Take it to a party, take it to your neighbor, or just take it to your dinner table.  Enjoy it with chips or over grilled chicken or fish, it is equally great either way.  And waaaaay better than store-bought salsa since it has fresh ingredients plus in-season sweet peaches.  

So where did I take my salsa?  This salsa travelled to my boss's annual summer barbecue last weekend, along with my favorite shredded red cabbage salad.  The guests got to enjoy all the food, but the biggest culinary event of the day was definitely the taqueria stand.  Each year all the guests line up to get carne asada, carnitas, and chicken tacos with freshly made tortillas, guacamole, and spicy salsas.  Mmmm... The marinades for the meats are amazing, and I love watching them press the tortillas and fry them on the grill!  My mouth is watering...I want tacos now.  Or some more salsa.

Quick Peach Chipotle Salsa


1/2 cup diced red pepper
1 1/2 cup diced ripe peach
Juice from 1 lime (about 1 1/2 tbsp.)
1 generous tbsp apricot jam or apricot puree
1 tbsp chopped chipotle chile, from can with juices
3 tbsp roughly chopped cilantro


Mix it all in a bowl.  Let is sit for at least half an hour.  Serve. 


Suggestions for serving: with tortilla chips or pita chips at a bbq; with grilled fish or chicken; mixed with cooked israeli couscous for a cold summer salad.

  10. A taqueria stand?!? I'm so jealous! I bet any of the tacos would be great with your salsa on top. As a totally random aside, I don't think I've ever bought apricot jam or puree. That makes me sad. I should change that immediately :)

  18. I recently made my first peach salsa but it was much more fruity than yours. I love the smokey flavour the chipotle brings to this. I also love how quick and versatile it is. YUM!

  20. I just bought all of the peaches that were left at the grocery store because I can't bear for them to be out of season lol. I must've looked like I was stealing them :x

    Anywho, this looks like such a great recipe! I just had a delicious burrito with sweet pickled mango, but I'm going to make this for the next time I make another one because I love having a fruity aspect :D
