Quick Peach Chipotle Salsa

Hi there!  Guess what? (this is a tricky one...) Its the weekend!!!  And even better, it is the weekend and it is still summer!  Yippee!  Does it get any better than this?  So, before you head out to your beach barbecues, backyard parties, or picnics in the park to enjoy these last beautiful days of summer, I wanted to give you a super quick recipe that you can take along with you.

And guess what else?  Oh yes, it has peaches.  I warned you that I am obsessed.

Since you can make this recipe in only a few short minutes, I am going to take only a minute to tell you about it.  Here is how it goes: Chop, chop, chop.  Mix, mix, mix.  Smoky, sweet, spicy.

Lacquered Peach with Honey Sage Ice Cream

I am not even going to try being humble here.  Not today.

Because this dessert is the kind of thing where you want to shout from the rooftops that you have stumbled upon something of greatness.  It has a sort of ethereal beauty that seems to radiate from within.  And the taste... Oh lord, imagine a luscious, ripe summer peach, but softer... and sweeter... and warm.  Ladies and gentlemen, this dessert was phenomenal.

Unfortunately, I can't take credit for the inception of this dessert; that belongs exclusively to Jean-Georges or Mark Bittman, whichever one of their masterminds dreamt up this simple stunner of a dessert.  Personally, I have been daydreaming about this dessert ever since earlier this year when I checked out Jean-Geoges: Cooking at Home with a Four-Star Chef from my local library.  You see, this book doesn't have photos for every recipe listed, but it does have insets with large glossy images of a few select dishes that occupy the upper echelons of Jean-Georges repertoire.  And this dessert was one of them.  Immediately when I saw that bright, shiny peach posting like a magazine model, I knew that I had to make this.

Since then, I kid you not, I have been counting down the months until peaches were in season so I could make this.  I know, I know... I could have made it anytime, and just gone to the grocery store and picked up everything I needed.  But since this seemed like the type of recipe where having in-season, high quality ingredients (like perfectly sun-ripened peaches and apricots) would make a big difference, I waited patiently.  Or maybe not so patiently, but I still waited.

Strawberry Lemonade Cupcakes

Ahhh... Summer.  Those lazy days when the living is easy and life is breezy.  I definitely love the bright blooms and fresh air of spring, the changing colors and brisk chill of fall, but I feel like I live for summer.  (Winter, eh, not such a fan.)  I think some of that summer love comes from a strong sense of nostalgia; dreaming about long midwest summer days filled with splashing around in the pool, running through sprinklers, and selling lemonade at the corner of our street for 25 cents a glass.  Of course, I love San Diego summers too, with the salty spray from the Pacific Ocean, backyard barbeques with friends, and an abundance of fresh produce.

And I have always loved summers for the food (even before I actually knew I was a bona fide foodie).  There really is nothing like a thick hamburger or a steak, fresh off the grill...juicy watermelon or strawberries...and a tall glass of lemonade or iced tea.  Somehow, if I sat down to enjoy a meal like this in the spring, it just wouldn't feel the same as if I was relaxing with my feet up on a balmy summer evening.

Although dessert is usually not the star of most summer meals (and those men hovering around the grill would deem anything other than meat-worshipping blasphemous), I wanted to make something summery but unique.  I found the recipe for these lemonade cupcakes in a cookbook I borrowed from a friend.

An Afternoon Bridal Shower: Lemon Berry White Chocolate Trifle

So I before I get on to the really important stuff (like bridal shower fun and delicious desserts) I thought I would preface this post with a little disclaimer: I think I been experiencing a bout of dessert compulsion.  As recently as just a few months ago, I was expending almost all of my culinary energy tossing together fresh salads, eating fish, and simmering healthy soups.  I would have said that I definitely prefer to cook rather than bake. Then love came to town (aka my boyfriend and his sweet tooth) and kicked my nutritious disciplined eating to the curb.  If you force me to choose, I would always pick my adorable Norwegian over vegetables, and when push comes to shove he really is a very healthy eater.  But somehow since he left last month, I haven't been able to stop making sweet treats!  I am getting lost in a tangent here; the point is, I have no plans to turn this into a dessert blog so don't be confused by the number of sugary posts from last month, or any cakes that I post in the next few weeks.

Now, on to the bridal shower!

In case you are just tuning in, I went home to Cleveland, Ohio last weekend for a bridal shower and bachelorette party for one of my dearest college friends.  There are seven of us bridesmaids, and we all worked together to plan this elegant extravaganza, and in my humble opinion (although I think the other ladies present would agree) everything turned out to be truly perfect.

The weather was amazing, with a clear blue cloudless sky and bright sunshine to greet us.  So many friends and family of the bride were able to attend, which made for a really friendly and lively afternoon.  Everywhere you looked, there were beautiful smiling faces of well-dressed women chatting together, either catching up on life with old friends or getting to know new friends.  And of course, we were all doting on the star of the day, the lovely bride.

As I mentioned in my last post, the mother of one of the other bridesmaids was generous enough to host the shower at her home, and it turned out to be an ideal venue: plenty of room both outside and inside, and absolutely charming to boot.  They did an amazing job of decorating everything with intricately embroidered tablecloths, patterned paisley napkins, brightly colored flowers, and cherished family china.  We started the afternoon outside where Judy and her mother had set up tables so everyone could enjoy lunch, and we followed up with gifts, games, and dessert inside.

Jacques Torres Chocolate Chip Cookies

Although I made these a few weeks ago now, I decided to post this today because I think it is the type of day where a good chocolate chip cookie is in order.  Today I feel sad, lonely, and tired.  Today is the kind of day where I just want to curl up with a blanket on a comfy couch, and not really talk about much.  Today I took my boyfriend to the airport to fly back to Norway.  Now lets be real here, I want you to eat this cookie, and love this cookie (because I did), so do not fear: I will not bemoan you with my feelings of depression or the fleeting, strange sensation that I get when I remember he isn't in the apartment anymore... No, no.  But suffice it to say, that today is definitely a chocolate-cookie-kind-of-day.

Because a good chocolate cookie is warm and comforting; really, it is like the food incarnation of a big tight hug, where you never want to let go.

I know you are waiting for me to say that this is my favorite chocolate chip cookie recipe, and that I have been making it since childhood.  Because everyone has a go-to chocolate chip cookie recipe, right?  Well, I certainly remember making loads of cookies, and I think we used the Toll House Recipe.  To be honest though, I have my fondest memories of heading down to the freezer in our basement, and sneaking prepared cookie-dough that we had gotten from the store.  There was a big tub of it in the freezer, which was perfect for sly snacking.

(If you ask my mom, she will tell you a story about when I came up from the basement one morning - yes I was eating cookie dough in the morning - and she accused me of having my hand in the cookie "jar."  Of course, I denied it up and down like a good little girl.  I thought I had gotten away with the crime until she pointed out a piece of dough that had gone awry and affixed itself to the front of my shirt.  Ah, caught red-handed, moms notice everything!)
